heaven in handheld form

This might be my favorite combination thus far. A lemon cupcake with a toasted coconut butter-cream frosting. Are you kidding me? My mouth is watering just remembering the flavor explosion in my mouth during taste testing. Our original concept was a lemon cupcake with a raspberry butter-cream frosting, but after actually baking it off we were less than enthused about it. The lemon cake was good (other than the fact that it needed to be a little more lemony), but the raspberry butter-cream was just plain weird. The texture was off, and even though the color was beautiful it lacked some serious flavor. Since we both LOVE coconut and had seen a recipe for a blueberry, lemon, coconut cupcake, we decided to give the coconut butter-cream a go. Oh my word. Seriously one of the best things I've ever put in my mouth. Although raspberry and lemon might seem like a more natural combination, pairing the lemon cupcake with the coconut butter-cream proved to be pure genius. We can't wait for you guys to try it!
